Cheesy Biscuits

Mix together this stuff:
1.5 cups almond flour
1/4 t salt
1T baking powder
1/2 t garlic powder

Mix this stuff up
(beat the crap out of it)
2 eggs
1/3 c sour cream
4T butter that you melted but I forgot to tell you ahead of time (sorrry)

Now add the wets to the dry but just fold it together. Don't take out your frustrations.
Gently fold in the cheese.

Oh.  Forgot to tell you this part too - spray a muffin pan with oil and preheat the oven to 400. Let the pan get hot. Spoon the mix into the sizzling hot pan and bake until it's toasty around the edges.

Makes 9 large biscuits.
Estimated 2 carbs, 14g fat, 150 calories
I made mini muffins and it comes out to about 3 mini per serving.












Bacon Spinach Gruyere Mini Muffins


dry ingredients:

1/2 c flour (try almond)
1/2 t b powder
salt

wet ingredients:
1/2 c liquid eggwhites
2 eggs
1 1/3 lowfat milk

other:
1 cup fresh spinach chopped fine
1/4 c grated gruyere

sauté together
1 slice bacon
1/4 onion finely minced
1 jalapeno

sauté that bacon stuff
mix wet stuff
mix dry stuff
add dry stuff to wet stuff
stir but don't beat
add sautéd stuff and spinach
stir again
Pour into sprayed mini muffin tins.
Bake at 350 til it pulls away from the side of the pan.
